this is very correct behavior. It is described at this page in the manual:

When you set Stabi/Function then depending on Function there is different Gyro mode - described all on linked page.

Gyro Gain between radio is different between menu in the radio and Spirit Settings because there is different multiplier.
Especially when you use Rudder Common Gain then the actual value in the radio has even smaller meaning. Important is always what you will see in the Diagnostic page. Same should be visible in the integration menu.

So if I disable the rescue (my stabi function) I can go to normal mode?

Yes, you are right.

Or you can set Stabilisation (Scale) if you want to use Stabilisation in Scale model with Gyro in Rate mode.
Or you can set another Bank with Function set to Disabled.

why the governor it does not set the rpm over 2500?
I increase the engine curve and all is ok until 2500 rpm over 2500 the engine doesn't go. (with max headspeed 3490)
If i changhe max headspeed the situation changhe max rpm 2300 (4000 max head speed)

Are you trying with Blades on or just on the bench with no blades?
The problem could be also in configuration of the throttle range. If it is not configured correctly then Spirit unit will reach this limit and RPM can't be higher.
Throttle range must be configured in the ESC with governor OFF with linear curve from 0 to 100%.
If it is not configured in the ESC then you have to adjust the range in Spriit unit manually.

I know the governor use max to 80% in this mode can increase engine if loses rpm but this model he needs of almost 2000usec

If you are testing on the bench then it might not work correctly.
You have to try with load - blades on.

It should work with default settings for Holding Limit.

I tested the helicopter in flight at 2500 rpm it's not good.
without governor this model with curve 85-100 fly well.
Holding limit I don't quite understand what it does.

I changed 1900usec in 200usec and holding limit from 80% to 95% and now the governor he arrives at 2800 rpm.

This unfortunately mean that the ESC calibration was not matching with Spirit throttle range.
Maybe the ESC was calibration with JETI receiver previously.

If Altitude Limit does not stop it mean there is some other function active, very likely Rescue mode.
It is needed to change settings.
You can send your settings file and I can check it.
