I'm going to reset the gyro to factory settings. The gyro is seated so that it is difficult to take in and out the cables. Is it possible to reprogram the gyro with the servos connected without the servos breaking?

If your servos are all 1520 then nothing wrong should happen. In the worst case it is enough to unplug Rudder. Or at least tail servo arm.
